Lunch/Sunday – Thai Coconut Curry Butternut Squash Soup 8, add chicken & white rice

Next time: After pureeing the soup, add peppers and shredded chicken. I added rice this time and it was good!

Next time:
Don’t be afraid to use more of the chili garlic sauce. I held back for fear it’d be too spicy, it’s not very spicy at all and would benefit from a little more flavor. Consider adding a touch of brown sugar.

Monday – *Slow Cooker Chicken Curry*, add zucchini & green beans 
What I did:
I used my 2 person crockpot, I used 1 chicken breast, skipped the chickpeas because they wouldn’t fit, added a Fresno pepper, and skipped the cayenne pepper.
Tuesday – *Pot Roast (shallots, beef broth, balsamic)*, Mashed Potatoes, Green Beans

Wednesday – General Tso Chicken, Rice, Broccoli, Peppers
Thursday – Steak, Risotto, Green Beans
Friday – Chicken Enchiladas +add green onions

Lunch for the week: Zucchini Meatballs 6, Spinach Linguine, Asparagus

Monday: Zucchini Meatballs 6, Spinach Linguine, Asparagus
Tuesday: Moroccan Spiced Chicken and Veggies 9, with couscous
Edits:
I didn’t have Moroccan spice, so I used a Dukkah Spice Mix instead.

Wednesday: Filet, Stuffed Tomatoes 8, asparagus, potatoes

Filet: Sear filet on each side for about 2 minutes, place in the oven at 400 for 10 minutes, flipping halfway through.

Asparagus: Sprinkle with olive oil, salt & pepper, bake at 400 for about 10 minutes.

Potatoes: Chop, place on a cookie sheet, sprinkle with salt & pepper, bake at 400 for 45 minutes.

Thursday: Honey Sriracha Chicken, White Rice, Broccoli
Friday: Take Out
