Lunch/Sunday – Buffalo Meatballs, Rice, Steamed Broccoli, Cottage Cheese
I only used celery and eggs in the meatballs (skipped cheese), the meatballs were pretty wet, next time I’ll try just one egg. I usually eat them with sour cream but tried cottage cheese this time and thought it was good.
Monday – Autumn Chicken Dinner
Cook entire squash, save half for Thursday night.
Wednesday – Thai Coconut Curry Soup
Thursday – Spaghetti Squash Lasagna, Garlic Bread, Mixed Green Salad
Scoop out squash and cook lasagna in a casserole dish instead of cooking it in the squash shell.
Friday – Chicken Stir Fry (add zucchini) w/Rice
