Sunday/LunchAsian Green Bean & Turkey Rice Bowls

Monday Crock Pot Chicken Tikka Masala, Naan, Basmati Rice, Steamed Broccoli

  • (use 2 Tbsp tapioca flour for each 1 Tbsp corn starch)

 

This was good, 7 out of 10. Next time I would use more spices to give it a bit more flavor.

Tuesday – Steak, Roasted Red Potatoes, Asparagus, Beet Avocado & Fried Goat Cheese Salad

 

WednesdayChicken Enchilada Squash

  • Use crock pot to cook chicken w/Ro-tel &chicken broth

Thursday – Coconut Chicken, Steamed Broccoli, White Rice

  • Lighting cook chicken on either side in oil in pan, finish in oven.
  • Make sauce out of sweet chili sauce and Sriracha.

Friday Pork Loin w/Wine & Herb Gravy, Mashed Potatoes, Green Beans/Asparagus, Beet Avocado & Fried Goat Cheese Salad

Saturday – Grilled Chicken & Roasted Veggies
