February 28th – March 5th

Sunday/LunchCrockpot Chicken Fajitas 

  • Add Kale to Crockpot


Monday – Fish, Tartar Sauce, Mashed Potatoes, Asparagus, Sautéed Kale


Tuesday – *Coconut Curry Noodle Soup, Naan

  • Cook in the crock pot & shred chicken
  • Use spaghetti squash instead of noodles, save half for Thursday
  • Add Kale to Crockpot


Wednesday – Bun-less Turkey Burgers on Spanish Rice w/Guacamole, Sour Cream, Lettuce, scallions, & Tomatoes.



Thursday – Chicken Parmesan & Roasted Zucchini, served on Spaghetti Squash, Salad


Friday – Dads Birthday Dinner: Papa Johns Works & Meat Lovers Pizza, Salad, Betty Crocker’s German Chocolate Cake, Breyers Vanilla Ice Cream



Saturday – Grilled Chicken, Sesame Noodles, Broccoli

  • Sub red pepper flakes for hot chili oil and Olive Oil for Canola Oil.



February 21st – 27th

Sunday/Lunch – Spaghetti Squash Lasagna, Garlic Bread

  • I like to layer the ingredients in a casserole dish, rather than using the squash shell.


Monday – Chicken Massaman Curry, White Rice, Naan,

  • Add peppers, potatoes, carrots


Tuesday – Steak, Kale Caesar, Asparagus,  Butternut Squash Mashed Potatoes

  • Roast butternut squash, save half for Wednesday night. Use other half in mashed potatoes.


Wednesday – Panko Chicken, Orzo w/Butternut Squash, Broccoli 



Thursday – Steak, Sweet Potato, Kale Caesar, Asparagus



Friday – Grilled Chicken, Kale Caesar



Saturday – Left overs

February 7th – 13th

Sunday/LunchCrockpot Chicken Noodle


Monday Coconut Curry Noodle Soup, Naan,

  • Use spaghetti squash for noodles.
  • Next time: Skip the lime, try cilantro. Try cooking in the crock pot. Broth is very good!



Tuesday Steak, Beet & Feta Salad, Sweet PotatoSpaghetti Squash Au Gratin

  • Use left over onion from chicken noodle and other half of spaghetti squash.



Wednesday Zucchini Noodles w/Cilantro Lime Chicken

  • May need to eat this with rice.



Thursday – Steak, Beet Pesto Pasta, Roasted Veggies

  • Beet Pesto Pasta was delicious! Very garlicky! I used 2 beets and had way too much pesto.
