Sunday/LunchGarden Vegetable Quiche & Dressed Mixed Greens


MondayRice Balls w/Avocado & Pickled Ginger, Korean Sticky Chicken, Steamed Broccoli

Tuesday – Crock Pot Spaghetti Squash Curry, Chicken Curry Pie from Trader Joes

  • Spaghetti squash was not great, do not make again!

Wednesday – Grilled Chicken, Roasted Tomatoes Carrots & Asparagus, Sweet Potato

Thursday – Grilled Chicken, Cauliflower Mashed Potatoes, Asparagus

  • I steam half a head of chopped cauliflower then puree it in the blender, I combine it with 2-3 boiled red potatoes in the Kitchen Aid. Salt & Pepper, butter, and milk to taste/consistency. Sometimes I just used chicken broth instead of milk.

SaturdayFish, Cauliflower Mashed Potatoes, Green Beans








March 6th – 12th

Sunday/Lunch – Turkey Salad: Mixed Greens w/craisins, pistachios, apples, cheddar, and maple vinaigrette



MondayChicken Enchilada Stuffed Squash

  • Use buttercup (not butternut) squash if dumpling isn’t available
  • Cook chicken in the crockpot w/can of Ro-Tel – 5 hours on high


Tuesday – Steak, Zucchini Fritters, Garlic-Herb Potatoes, Sautéed Kale

  • Hold the butter on the potatoes



Wednesday – Roasted Chicken & Vegetables

  • Use boneless chicken breast
  • Add some kale!


Thursday – Steak, Sweet Potato, Steamed Broccoli

  • Sweet Potato: Cook in the microwave for 4 min, flipping half way, bake @400 for 10 min, then broil for 8 min. Top w/sour cream, salt & pepper.

Saturday –Fish, Tartar Sauce, Mashed Potatoes, Asparagus, Sautéed Kale
