Sunday/Lunch – Turkey Salad: Mixed Greens w/craisins, pistachios, apples, cheddar, and maple vinaigrette



MondayChicken Enchilada Stuffed Squash

  • Use buttercup (not butternut) squash if dumpling isn’t available
  • Cook chicken in the crockpot w/can of Ro-Tel – 5 hours on high


Tuesday – Steak, Zucchini Fritters, Garlic-Herb Potatoes, Sautéed Kale

  • Hold the butter on the potatoes



Wednesday – Roasted Chicken & Vegetables

  • Use boneless chicken breast
  • Add some kale!


Thursday – Steak, Sweet Potato, Steamed Broccoli

  • Sweet Potato: Cook in the microwave for 4 min, flipping half way, bake @400 for 10 min, then broil for 8 min. Top w/sour cream, salt & pepper.


FridaySpaghetti Squash Pad Thai

  • Add chicken


Saturday –Fish, Tartar Sauce, Mashed Potatoes, Asparagus, Sautéed Kale
