Wednesday – *Marinated Grilled Chicken, Greek Salad, Pearled Couscous

Thursday – Balsamic Steak and Vegetables, Baked Sweet Potato

Friday – Roasted Vegetables & Couscous w/Moroccan Chicken

  • Use quinoa instead of couscous
  • Moroccan spice: Ginger, White Pepper, Coriander, Turmeric, Allspice, and Cinnamon or use Dukkah  (Trader Joes)


Saturday – Tomato Basil Chicken, Fettuccine


April 24th – 30th

Sunday/Lunch – Buffalo Meatballs, White Rice, Broccoli

Monday – Chicken Lo Mein

  • Add celery

Tuesday – Dinner w/friends

Wednesday –  Chili Lime Pork w/Corn Salad, Creamy Dill Potato Salad, Zucchini

Thursday – Oven Fried Chicken, Creamy Dill Potato Salad, Chopped Salad w/Chipotle Lime Ranch

  • Sub olive oil for half of butter

Friday – Carribbean Pork Tenderloin w/Pineapple Salsa,  serve w/sauteed cabbage in taco shells

Saturday – Chicken Teriyaki Bowls

April 10th – 16th

Sunday/LunchTurkey Burgers, Spanish Rice, Avocado, Tomatoes, Lettuce

Rating: 6.5, I ended up making these into meatballs instead of burgers, they were great for an easy re-heatable lunch option.

MondayAsian Lettuce Wrap Chicken Chopped Salad

Rating: 7.5, both Zach and I really liked this.

Tuesday – * Spiced Pork Chops & Sweet Potato Mash, Green Beans

Rating: 7, this was good but I should have used thicker bone-in pork chops.

WednesdayCoconut Chicken Thai Curry

Rating: 6.5, I liked this but Zach prefers some of the other curries I have made.

Thursday – *Roast Beef, Mashed Potatoes, Green Beans

Rating: 8, Zach LOVED this roast beef.

FridaySesame Noodles w/Chicken & Broccoli

Rating: 8, this is getting a higher score partially because its so easy to make but also yummy!

SaturdayGrilled Chicken Chopped Salad

Rating: 8, the salad dressing is really good though I think I over dressed, should go a little lighter next time. It was really good and filling! Wish I had taken a photo….
